Ingredients

Makes 6 large pancakes

  • 2 Cup Wholemeal flour
  • 1/2 tsp Cinnamon
  • 1/2 Cup Cornmeal
  • 1/4 Cup Almond butter
  • 2 Tab Potato starch
  • 2 Cup Coconut milk
  • 2 tsp Baking Powder
  • 1/8 Cup Maple syrup
  • 1/2 tsp Baking soda
  • 1/4 tsp Apple cider vinegar

Instructions

  1. In a large bowl mix together the dry ingredients.
  2. Add the remaining ingredients and whisk together to combine well, ensuring butter is smooth and contains no lumps. Butter should be spongy — not runny or thick.
  3. Preheat frying pan over medium heat. Grease with a little coconut oil (or oil of choice).
  4. Pour a ladle full of butter into pan and cook until small bubbles start to appear, flip with spatula. Cook on both sides until golden brown.
  5. Serve with freshly squeezed lemon juice and a sprinkle of coconut sugar and cinnamon.
